Afternoon Tea with Carrot Cake

Welcome friends for tea this week.  I had purchased a couple of six inch cake pans when I was taking baking classes earlier this year but haven't really put them to much use.  As the instructor pointed out, if there's only the two of you, this is the perfect size for a little cake.
Somewhere on the web I found a recipe for a 6 inch carrot cake that I changed a bit; for one thing, I use applesauce instead of oil whenever possible and it still produces a moist baked good.
I refreshed some yellow icing stored in the fridge and it looks more like a spring cake but I used what was on hand.
 This Santa mug from Hallmark sure holds a big cup of tea.
 A Pumpkin Cupcake candle burning on the table makes the whole kitchen smell yummy.
 Both hubby and I agreed the recipe was a keeper and you can find it on my sidebar under the Lavender Cottage Recipe page.
We had an early snowfall this year and it is staying on the ground, each day a few more flakes added to the winter wonderland outside.  Here's a shot of the the backyard at night with the tea house in the back and lots of doggy footprints.

I don't eat many sweets, but carrot cake is a completely different situation and not to be turned down if offered! This one looks delicious, just right with a Santa mug of tea. Your husband must enjoy benefiting from your tea posts!

Wow what a perfect size cake! I like it with the yellow icing as well. It's my husband's favorite cake and I may be making one this weekend with his birthday coming up --unless he opts for an apple pie instead. :-) Your snow looks so pretty!

That sounds like a wonderful thing to do...have a tea just for the two of you. Why not? There is no good reason not to and every good reason to. Must remember this.

Judith, your cake not only looks good but it sounds wonderful too! I haven't made a carrot cake in a while. I guess it's time for one soon. whow, you have snow already. Thats perfect for Christmas, but I would rather wait with snow (if I would be asked!). Here it is raining a bit like its usual at November. Oh Judith, your cake looks wonderful! I will have to look for the 6" pans...I only bake a cake when we have company, because the 2 of us can't...or shouldn't...finish a whole one. Great idea! Love your big Santa mug. So cute! Your snow scene is lovely! We used to live in snow country, now it only snows occasionally on the coast. I miss the light snowfalls, not the heavy ones! Your tea is lovely! And with your beautiful little carrot cake it is fit for a queen! The Santa mug is perfect for the season. I do love big mugs that can hold a good amount of tea while I am doing chores and don't want to spill out of a dainty tea cup.

OMGoodness! That carrot cake looks amazing! And I am SO JEALOUS of your snow! Living in Minnesota we usually have our share but last year there was no white Christmas and this year, so far, no snow! Snow just adds to the Christmas atmosphere...

I especially like this post because it never occurred to me to adjust my cake recipes until you mentioned it. Wasting so much cake or eating it all so as NOT to waste it doesn't make sense. I want to tap myself on the head and say "duh". Simple idea & plan once someone mentions it.

The Santa mug is the size & kind of mug my husband prefers with his tea, and he adds a lot of his home-raised honey to sweeten.

Silly me...I never heard of 6 inch cake pans. I need those for Mr. Sweet and I...would be the perfect size.

That cake looks yummy. I like Carrot Cake and always order it in a cafe because I have never been able to make one myself. A big slice with a cup of hot tea is just the biggest treat!

I was salivating over your cake and wishing for a slice for breakfast, but then I saw the photo of your back yard and I forgot all about the cake and started salivating over the scene in your yard. What a beautiful scene with the light on and the fun tracks in the snow. So glad you shared that photo too.

I love carrot cake but I havenpt made it in a long time b/c James and Sophia are not huge fans - I always make it for my MIL she loves it and one always wants the MIL Happy!!!
